Kids always get excited over pizza for dinner. This dish satisfies that craving and is very quick to put together. I first had this at a Pampered Chef party but I prefer to make my own dough and the opportunity to add more flavor that way.
2 c Flour
2 tsp Baking Powder
1 tsp Garlic Salt
1/4 tsp Baking Soda
1/3 c Canola Oil
2/3 c Buttermilk
1 tsp dried Basil
2 tsp dried Parsley
2 c Marinara Sauce
3 c favorite melting Cheese
up to 3 c favorite Pizza Toppings
For the biscuit dough, combine all the dry ingredients. Add the oil and buttermilk until a soft dough forms. Cover and allow to rest for at least 10 minutes. Rip the dough apart into 1/2 inch pieces. They don’t need to look pretty.
Pour the marinara sauce onto the ripped up dough and gently toss until it is thoroughly coated.
Mix in half of the cheese and all of your favorite toppings. This can be traditional pizza toppings such as italian sausage and peppers, or leftover grilled chicken and asparagus. Whatever sounds good to you. In the example below I used mushrooms, smoked sausage and black olives.
Spread in a greased 9×13 pan and place in a 375 degree oven and bake 20 minutes. Sprinkle on the remaining cheese and bake an additional 5 to 10 minutes.
Substitute half the marinara sauce for salsa and go with Mexican toppings.
Substitute half the sauce for your favorite BBQ sauce and add steak.
